Jalapeno Jelly!

Jalpeno Jelly is one of Mr. Wonderful’s favorite treats.  At first thought it might sound completely unappealing, but trust me, if you like sweet, sour and spicy all together, you’ll love this jelly!

I’ve been known to put a dab of this jelly on a triscuit, add a slice of ham and some swiss cheese, pop it into a 400 degree oven for a few minutes and wa-la – perfectly simple snacks!


Here they are, the stars of this recipe!


Recipe: Jalapeno Jelly


  • 3/4 pound Jalapeno Peppers
  • 2 cups white vinegar
  • 6 cups sugar
  • 2 pouches liquid pectin
  • Green food coloring if desired


  1. Wash peppers.
  2. Remove seeds and inner membrane.
  3. Place peppers in food processor with 1 cup of vinegar.
  4. Puree peppers and vinegar.
  5. Place pureed peppers in a large heavy pot.
  6. Add the other cup of vinegar and 6 cups of sugar.
  7. Bring to a boil and boil for 10 minutes stirring frequently.
  8. Add pectin, return to a boil and boil for one minute.
  9. Add a few drops of green food coloring if desired.
  10. Ladle hot jelly into hot jars, seal and process in boiling water canner for 10 minutes.

Makes 5 to 6 half pints of jelly.

A Touch of Color Sneak Peek

I’ve been having so much fun designing  this summer.  This kit came about from a suggestion by a fellow scrapper. She’s looking for a mostly black and white kit.  That inspiration led to A Touch of Color.  Shades of black, gray and white with a few really cool pops of seven bright colors.

Eclipse Opening Night

If you were not aware that the latest movie, “Eclipse”, in the Twilight series was released recently, you either don’t have any women in your life or you’ve been living under a huge rock!

The girls and I carefully planned our night out to the midnight showing of Eclipse.  When the last movie opened we saw it together, sort of.  In two different time zones and three different cities.  Now that all the Things are home from college, we were able to experience Team Edward and Team Jacob together!

Some of them were paying attention, some of them were texting their friends.


Following the movie we made a mad dash for the truck.  The line to the bathroom in the theatre was nearly a mile long.

We zoomed across the street to the convenience store – same line, different people.  Our next bathroom stop of desperation led us to Wal-Mart.  Success!

Then it was off to find something yummy to eat.

Mine – Coffee Lovers Only!  It makes me smile just thinking of it.


At 3 in the morning we arrived home and quietly and quickly headed off to bed.

It was amazing how much less talkative the girls were on the way home from the movie in comparison to on the way there.
